This interview originally aired on In the Moment on SDPB Radio.

Wheat is one of the first plants ever domesticated by humans. But a lot has changed in the past thousands of years in terms of how wheat is grown and modified.

Sunish Sehgal, Ph.D., is an associate professor and award-winning winter wheat breeder at South Dakota State University.

He takes us into the genetics of this dietary staple and how to create crops better suited to handle the rapidly changing climate.

Learn more about his research.
